Ingredients:

  • 200g ramen noodles
  • 400ml coconut milk
  • 2 tbsp red curry paste
  • 500ml chicken or vegetable stock
  • 200g chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 cup spinach
  • 1 tbsp fish sauce
  • Lime wedges and cilantro for garnish

Instructions:

  1. Sauté curry paste in a pot for 1 minute, then add coconut milk and stock.
  2. Add chicken and cook for 10 minutes.
  3. Stir in noodles, bell pepper, spinach, and fish sauce. Cook for another 5 minutes.
  4. Garnish with lime and cilantro before serving.
