Ingredients:
- 200g ramen noodles
- 400ml coconut milk
- 2 tbsp red curry paste
- 500ml chicken or vegetable stock
- 200g chicken breast, sliced
- 1 red bell pepper, sliced
- 1 cup spinach
- 1 tbsp fish sauce
- Lime wedges and cilantro for garnish
Instructions:
- Sauté curry paste in a pot for 1 minute, then add coconut milk and stock.
- Add chicken and cook for 10 minutes.
- Stir in noodles, bell pepper, spinach, and fish sauce. Cook for another 5 minutes.
- Garnish with lime and cilantro before serving.
