Ingredients:
- 2 chicken breasts, shredded
- 1 can (400g) fire-roasted tomatoes
- 1 chipotle pepper in adobo sauce
- 1 onion, diced
- 2 garlic cloves, minced
- 8 corn tortillas
- 1 tbsp olive oil
- Fresh cilantro, for garnish
Instructions:
- Heat olive oil in a pan; sauté onion and garlic until softened.
- Blend tomatoes and chipotle pepper into a smooth sauce.
- Add sauce and shredded chicken to the pan; simmer for 15 minutes.
