Ingredients:

  • 2 chicken breasts, shredded
  • 1 can (400g) fire-roasted tomatoes
  • 1 chipotle pepper in adobo sauce
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 8 corn tortillas
  • 1 tbsp olive oil
  • Fresh cilantro, for garnish

Instructions:

  1. Heat olive oil in a pan; sauté onion and garlic until softened.
  2. Blend tomatoes and chipotle pepper into a smooth sauce.
  3. Add sauce and shredded chicken to the pan; simmer for 15 minutes.
  4. Warm tortillas and assemble with chicken mixture. Garnish with cilantro.
