Ingredients:

  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 cup cooked quinoa
  • 1/2 cup diced cucumber
  • 1/4 cup chopped red onion
  • 1/4 cup chopped parsley
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium-high heat. Rub chicken breasts with olive oil, salt, and pepper. Grill for 6-8 minutes per side, until cooked through.
  2. In a large bowl, combine cooked quinoa, cucumber, onion, and parsley.
  3. Slice grilled chicken and add to the quinoa mixture.
  4. Drizzle with lemon juice and season with salt and pepper. Serve warm or chilled.
