Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups fresh or frozen peas
- 4 cups vegetable stock
- 1/2 cup fresh mint leaves
- Salt and pepper to taste
- 1/4 cup plain yogurt (optional)
Instructions:
- Heat olive oil in a pot and sauté onion and garlic until softened.
- Add peas and vegetable stock. Bring to a boil, then simmer for 10 minutes.
- Blend the soup with mint leaves until smooth.
- Season with salt and pepper. Serve with a dollop of yogurt if desired.
