Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups fresh or frozen peas
  • 4 cups vegetable stock
  • 1/2 cup fresh mint leaves
  • Salt and pepper to taste
  • 1/4 cup plain yogurt (optional)

Instructions:

  1. Heat olive oil in a pot and sauté onion and garlic until softened.
  2. Add peas and vegetable stock. Bring to a boil, then simmer for 10 minutes.
  3. Blend the soup with mint leaves until smooth.
  4. Season with salt and pepper. Serve with a dollop of yogurt if desired.
