Ingredients:

  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Cook quinoa according to package instructions. Let cool.
  2. In a large bowl, combine quinoa, black beans, corn, bell pepper, and cilantro.
  3. Drizzle with lime juice and olive oil. Toss gently to combine.
