Ingredients:
- 2 medium sweet potatoes, diced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1 can (400g) black beans, drained and rinsed
- 8 small corn tortillas
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- Lime wedges
Instructions:
- Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, chili powder, and cumin. Roast for 20 minutes.
- Warm tortillas in a skillet.
- Fill tortillas with roasted sweet potatoes, black beans, and avocado slices.
- Garnish with cilantro and serve with lime wedges.
