Ingredients:

  • 2 medium sweet potatoes, diced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 can (400g) black beans, drained and rinsed
  • 8 small corn tortillas
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • Lime wedges

Instructions:

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, chili powder, and cumin. Roast for 20 minutes.
  2. Warm tortillas in a skillet.
  3. Fill tortillas with roasted sweet potatoes, black beans, and avocado slices.
  4. Garnish with cilantro and serve with lime wedges.
