Ingredients:

  • 2 salmon fillets (150g each)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 avocado, diced
  • 1/2 cup diced tomato
  • 1/4 cup chopped red onion
  • Juice of 1 lime

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Rub salmon fillets with olive oil and season with salt and pepper.
  3. Bake for 15-20 minutes, until salmon flakes easily with a fork.
  4. While the salmon bakes, prepare the salsa by combining avocado, tomato, onion, and lime juice.
  5. Serve the salmon topped with avocado salsa.
