Ingredients:

  • 1/4 cup (60g) unsalted butter, melted
  • ½ cup (100g) brown sugar
  • 6 pineapple slices
  • 1 ½ cups (190g) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ½ cup (115g) unsalted butter
  • 1 cup (200g) sugar
  • 2 large eggs
  • ½ cup (120ml) pineapple juice

Instructions:

  1. Preheat oven to 350°F (175°C). Spread melted butter and brown sugar in a 9-inch round pan. Arrange pineapple slices.
  2. Combine flour, baking powder, and salt. Cream butter and sugar, then add eggs.
  3. Alternate dry ingredients with pineapple juice. Pour batter over pineapple.
  4. Bake for 40 minutes. Invert onto a plate after cooling.
