Ingredients:
- 1/4 cup (60g) unsalted butter, melted
- ½ cup (100g) brown sugar
- 6 pineapple slices
- 1 ½ cups (190g) all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp salt
- ½ cup (115g) unsalted butter
- 1 cup (200g) sugar
- 2 large eggs
- ½ cup (120ml) pineapple juice
Instructions:
- Preheat oven to 350°F (175°C). Spread melted butter and brown sugar in a 9-inch round pan. Arrange pineapple slices.
- Combine flour, baking powder, and salt. Cream butter and sugar, then add eggs.
- Alternate dry ingredients with pineapple juice. Pour batter over pineapple.
- Bake for 40 minutes. Invert onto a plate after cooling.
