Ingredients:

  • 1 ¼ cups (160g) all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¾ cup (150g) sugar
  • ½ cup (115g) unsalted butter, softened
  • 2 large eggs
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • ½ cup (120ml) milk
  • 1 tbsp poppy seeds

Instructions:

  1. Preheat oven to 350°F (175°C) and line a cupcake pan.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. Cream sugar and butter until fluffy. Add eggs, lemon juice, and zest.
  4. Alternate adding dry ingredients and milk. Stir in poppy seeds.
  5. Pour batter into liners. Bake for 18 minutes. Cool completely.
