Ingredients:
- 1 ¼ cups (160g) all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ¾ cup (150g) sugar
- ½ cup (115g) unsalted butter, softened
- 2 large eggs
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- ½ cup (120ml) milk
- 1 tbsp poppy seeds
Instructions:
- Preheat oven to 350°F (175°C) and line a cupcake pan.
- Whisk flour, baking powder, and salt in a bowl.
- Cream sugar and butter until fluffy. Add eggs, lemon juice, and zest.
- Alternate adding dry ingredients and milk. Stir in poppy seeds.
- Pour batter into liners. Bake for 18 minutes. Cool completely.
