Ingredients:

  • 2 lbs beef chuck, cubed
  • 3 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 2 tbsp tomato paste
  • 4 cups beef stock
  • 1 cup red wine (optional)
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  1. Heat 2 tbsp olive oil in a large pot. Brown beef cubes in batches, then set aside.
  2. Add remaining oil, sauté onion and garlic until soft.
  3. Stir in tomato paste, beef stock, wine, thyme, and bay leaf. Return beef to the pot.
  4. Simmer for 1.5 hours, stirring occasionally.
  5. Add carrots and potatoes; cook for 30 minutes or until tender. Adjust seasoning and serve.
