Ingredients:
- 2 lbs beef chuck, cubed
- 3 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 3 carrots, sliced
- 3 potatoes, cubed
- 2 tbsp tomato paste
- 4 cups beef stock
- 1 cup red wine (optional)
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions:
- Heat 2 tbsp olive oil in a large pot. Brown beef cubes in batches, then set aside.
- Add remaining oil, sauté onion and garlic until soft.
- Stir in tomato paste, beef stock, wine, thyme, and bay leaf. Return beef to the pot.
- Simmer for 1.5 hours, stirring occasionally.
- Add carrots and potatoes; cook for 30 minutes or until tender. Adjust seasoning and serve.
