Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup baby potatoes, halved
- 1 cup carrots, sliced
- 1 cup broccoli florets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes and carrots with 1 tablespoon olive oil, thyme, salt, and pepper. Spread on a baking sheet.
- Place chicken breasts on the sheet and drizzle with the remaining olive oil, garlic, lemon zest, lemon juice, salt, and pepper.
- Roast in the oven for 25 minutes.
- Add broccoli to the pan and continue roasting for an additional 10-15 minutes, until the chicken is cooked through and vegetables are tender.
