Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup baby potatoes, halved
  • 1 cup carrots, sliced
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes and carrots with 1 tablespoon olive oil, thyme, salt, and pepper. Spread on a baking sheet.
  3. Place chicken breasts on the sheet and drizzle with the remaining olive oil, garlic, lemon zest, lemon juice, salt, and pepper.
  4. Roast in the oven for 25 minutes.
  5. Add broccoli to the pan and continue roasting for an additional 10-15 minutes, until the chicken is cooked through and vegetables are tender.
