Ingredients:

  • 12 oz spaghetti
  • 4 oz pancetta, diced
  • 2 eggs
  • 1/2 cup grated Parmesan
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. Cook spaghetti according to package instructions. Reserve 1/2 cup pasta water.
  2. In a pan, cook pancetta until crispy. Add garlic and sauté briefly.
  3. Whisk eggs and Parmesan in a bowl.
  4. Add cooked spaghetti to the pan, toss, and remove from heat.
  5. Quickly mix in egg mixture, using reserved pasta water to adjust the consistency. Serve immediately.
