A festive vegetarian dish featuring acorn squash filled with a flavorful stuffing of quinoa, cranberries, and pecans.

Ingredients:

  • 2 medium acorn squashes, halved and seeds removed
  • 1 cup cooked quinoa
  • ½ cup dried cranberries
  • ¼ cup chopped pecans
  • ½ cup diced apple
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Brush squash halves with olive oil and season with salt and pepper. Roast for 30 minutes.
  2. In a bowl, combine quinoa, cranberries, pecans, apples, cinnamon, nutmeg, and maple syrup.
  3. Remove squash from oven, fill with stuffing, and bake for another 15 minutes.
  4. Serve warm, drizzled with extra maple syrup if desired.
