A festive vegetarian dish featuring acorn squash filled with a flavorful stuffing of quinoa, cranberries, and pecans.
Ingredients:
- 2 medium acorn squashes, halved and seeds removed
- 1 cup cooked quinoa
- ½ cup dried cranberries
- ¼ cup chopped pecans
- ½ cup diced apple
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 2 tbsp maple syrup
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions:
- Preheat oven to 375°F (190°C). Brush squash halves with olive oil and season with salt and pepper. Roast for 30 minutes.
- In a bowl, combine quinoa, cranberries, pecans, apples, cinnamon, nutmeg, and maple syrup.
- Remove squash from oven, fill with stuffing, and bake for another 15 minutes.
- Serve warm, drizzled with extra maple syrup if desired.
